So I'm starting to make my own cheese. The question is how do I know if the consistency is hard enough for it to provide the sponge effect? Do I have to leave it to dry for days or can I eat the soft cottage cheese. Lmk in the comments
@Klaudio_Bosi I left it out to dry for about a day. It was super good and still very soft

@Klaudio_Bosi you can eat it still wet like cottage cheese if you want but it's not the same

@RuskinPrimal my main concern is will it still act as a sponge? I know drier is better obviously but does it still work as a sponge even as soft cottage cheese?
