    What quality criteria does raw meat (or other raw animal foods) need to meet so it can be eaten worry-free, and where is the best place to source it?

      All raw meat can be eaten worry free. The raw fats in the meat will bind to the toxins in the meat so you don't absorb them. Cooking makes it more dangerous. This is not to say you shouldn't try to get higher quality meat because it will often be more nutritious and you wont lose a small amount of raw fats which have to bind to the toxins in the meat each time.

      The only problem with low quality raw meat is that the taste will be worse or sometimes even bad and it will be harder to adhere to the diet without cheating/cooking.

      I recommend looking for a package of meat that says no hormones, antibiotics, 100% grass-fed and finished meat. Pasture-raised isnt super important. Ideal coloring should be yellow to yellowish fat and dark red meat. If the meat is dark red and yellow to yellowish fat its very good quality and will taste amazing. If you're short on money look for a high quality ground beef package with all the qualities listed above.
