    Raw milk naturally contains lactic acid bacteria, yeasts, enzymes, and other microorganisms. When you do the right things, these microbes ferment the milk into different cultured foods. Different traditions have produced different products, each with unique flavors, textures, and microbial cultures.

    This guide explains what each type is, how it works, potential benefits, and how to make them.

    Why Ferment Raw Milk?
    Fermentation changes milk in several ways.

    1. Beneficial bacteria multiply

    Lactic acid bacteria consume lactose (milk sugar) and produce lactic acid.

    Common bacteria include:

    • Lactococcus
    • Lactobacillus
    • Leuconostoc
    • Streptococcus thermophilus (depending on culture)
    • Various yeasts (especially kefir)
      These microbes lower spoilage organisms by lowering pH

    2. Lactose decreases

    As bacteria consume lactose:

    • Milk becomes easier to digest especially if youre lactose intolerant
    • Sweetness decreases
    • Acidity increases
    • Carbs decrease (so can be better if on a zero carb diet)

    Longer fermentation means less lactose.

    3. New nutrients are formed

    Fermentation microbes produce:

    • Vitamin K2 (certain strains)
    • Some B vitamins
    • Bioactive peptides
    • Organic acids

    The exact amount depends on the microbial strains.

    4. Proteins become predigested

    Microbes break proteins into:

    • Peptides (buzzword buzzword)
    • Amino acids

    Many people find fermented dairy easier to digest

    5. Texture changes

    Casein proteins coagulate into a gel.

    Depending on the microbes this creates:

    • Clabbered milk
    • Kefir
    • Yogurt
    • Sour cream
    • Cultured butter
    • Cheese

    Different Types of Raw Milk Fermentation

    1. Clabbered Milk

    • This is probably humanity's oldest fermented dairy.
    • No starter culture is added.
      Instead:
      Naturally occurring bacteria in raw milk multiply and the milk thickens while whey separates and acidity increases, giving you a tangy, creamy, and mildly sour drink wkth a yogurt-like texture and separated whey.

    2. Raw Milk Kefir
    Kefir uses kefir grains. These are not cereal grains. They are rubbery clusters containing bacteria, yeasts, and polysaccharides. There are over 30-60 species present depending on grains, producing one of the most microbially diverse foods.

    3. Cultured Raw Cream

    Instead of milk, ferment cream.
    Produces:

    • crème fraîche
    • cultured cream
    • SUPER rich

    4. Cultured Raw Butter
    Butter made from fermented cream. Traditional European butter. It has a longer shelf life and more diversity, although benefits are debatable as there is not so much lactose to be predigested.

    1. Raw Cheese

    Cheese is fermented milk with additional steps: coagulation, draining, aging. Different bacteria depending on the cheese.

    Disclaimer: Suddenly introducing lots of fermented dairy when youre full of toxins can cause unpleasant detoxification symptoms at first including diarrhea, nausea, and more. Start with a glass or so a day and work your way up.

    Clabbered Milk (HOW TO)
    How It Works:

    • Raw milk already contains microbes.
    • Leaving milk undisturbed at room temperature allows beneficial acid-producing bacteria to dominate.
    • The pH gradually falls.
      Once acidic enough:
    • casein proteins coagulate.
    • Milk thickens naturally.
      Equipment
      You need:
    • fresh raw milk
    • clean glass jar with no chemical wash or soap residues
    • breathable cloth or loose lid
    • rubber band
      Keep it in room temp not exposed to light at 20–24°C (68–75°F).
      Too cold: slow fermentation.
      Too warm: microbes dead
      Instructions
    • Pour milk into glass jar.
    • Leave about 20% empty space.
    • Cover with cloth.
    • Do not seal airtight.
    • Leave for 1-3 days untouched
    • It will become thicker, mildly sour, visible separation, and a neat aroma if done right.
    • Once desired fermentation is reached, refrigerate it (i personally never refrigerate my milk as the benefits never stop and too much fermentation doesn't exist).
      When youre ready to consume it
    • Strain for consistency
    • Stir gently until separation is gone
      Different results have different benefits. Some off-target results can be mold which is greatly beneficial but it will be toxic from mycotoxins and chemicals if fuzzy growth, pink, green, black, orange, or unappealing to your senses through smell. It should smell sour.

    Kefir

    Unlike clabber, kefir requires kefir grains. Kefir contains yeasts which produce co2 and tiny amounts of alcohol as fair warning (you will not get drunk).

    Equipment

    • See Clabbered Milk
    • Kefir grains or Kefir
      Metal contact is minimized because exposure to reactive metals may affect grains, though brief contact with stainless steel is acceptable.
      Ratio
      Common starting ratio:
    • 1 tablespoon grains or 4tbsp Kefir (no other ingredients besides milk + cultures)
      per
    • 2 cups raw milk

    Everything aside from the grains is the exact same as clabbered milk, see above for what to do.
    You may keep the jar with kefir culture stuck on the inside and simply pour raw milk into it to ferment more kefir.
    You may use lemon peel, vanilla, berries, or cinnamon to flavor the kefir.

    Cultured Cream

    • Use raw cream.
    • Leave at room temperature 12–48 hours.
      Produces thick cultured cream.
      Excellent for:
    • sauces
    • desserts
    • formulas
    • remedies

    Cultured Butter

    Step 1:
    Have cultured cream
    Step 2:
    Churn.

    • Butter separates from buttermilk.
    • Store cold.
      Traditional cultured butter has a richer, tangier flavor than sweet cream butter. I personally prefer it

    Raw Cheese
    Basic process in order:
    Milk, Starter bacteria, Coagulation, Curd, Drain, Age days to years.
