Does eating lamb or calf have any significant benefits when compared to a fully grown sheep and cow, or are they just basically the same?

Younger animals just taste better, I can only assume because the animal has had less stress, certain growth hormones which cause the meat to taste sweet & of course less toxins(Vaccination less likely). More pricey that goes without saying.

I've actually heard differently, I've also heard that aged beef or bison that has grown older than 4 years tastes better than the regular schedule killed beef/bison
