As the title said I left a ribeye sitting out in my room overnight and the exposed part got super dark like almost black while the side on the plate is still light red. Maybe it fermented a bit? Thoughts?

@Vibrance-ᛉ if you left it out overnight then it has barely fermented, only dried a bit. I do it quite often cuz I don't wanna put my meat in the fridge again. But I only do it to beef. Chicken has more oily fat and is so good (tbh even better than beef/lamb fat cuz the fat is harder and drier) but I don't like it so much when it ferments.
