Maybe it fermented a bit? Thoughts?</p>

I do it quite often cuz I don't wanna put my meat in the fridge again. But I only do it to beef. Chicken has more oily fat and is so good (tbh even better than beef/lamb fat cuz the fat is harder and drier) but I don't like it so much when it ferments.</p>
