Heat changes chemicals structure, changing structure means the chemicals/nutrients got damaged objectively for bioavailability as it doesn’t have the structure of a proper normal chemical, in the body those damaged chemicals need to be repaired before they can be used.
I would specify
All heat damaged vitamins are metabolized and excreted out because they function as specific intact molecules (completely useful or useless), if a vitamin gets even tiny damage it's not usable at all, whereas proteins and fats are broken down into building blocks first, so the body can still use whatever small amino acids and fatty acids that are not heat damaged. Vitamins can't be repaired after damage.
