butchers have better quality meat imo. my butcher has dark blood and yellow fat. my local have pale pink steak and white fat

Many people have done it without issue. If you can get higher quality like organic beef then I would. All you have to really worry about is eating poor quality raw filtration organs like livers or kidneys, as these accumulate toxins far worse than the muscle meat and can make you sick.
