I've come to genuinely enjoy raw meat more

Yeah because your used to the flavour more so I transitioned to raw for a couple months without ever eating any cooked and when I ate cooked again it tasted horrible and now I refuse to eat cooked

the qustion is, intuitively, why does it taste better even just grilled without any extra alterations vs raw?

is it only the fact we are used to cooked meat?

again it's more likely the cooked butter or tallow that gives it that smell, which is a nice smell. but both cooking unseasoned ground meat and also raw meat both don't really have scents. also they are both tastless aswell.

This is why i advocate for eating a rare cooked steak once or twice a month. You still get all the benefits of it being 80/90% raw in the middle and you get different variety & flavor. It's really not that deep.
