on the other hand, muscle meat I really enjoy, beef, pork, steaks etc.

but when I eat the heart and liver I don't get any stomach pain to indicate food poisoning.

I've been on the diet for a little over 3 weeks, could it just be traumatic conditioning from cooked liver in the past? I hate cooked liver.

If you have yet to do so, have a go at liver and heart from calf and lamb if you seek a less iron-laden, even sweeter flavor. I have often made myself a lamb heart's tartare with duck eggs.

For me heart has always tastes just like muscle meat, maybe slightly more of an iron taste
