It's calculated by combustion of that food in a closed thermodynamic system. Our body is not a closed system. It's open and changing. While calories may give you a good idea of the energy that would be yielded from eating a specific amount of food, it may also not. The calculations for calories can be very off, and even if they are spot on, metabolic efficiency can change the amount of atp yielded and thus the amount of potential energy stored.</p>
