If you gonna whip them u MUST add something, like a coating agent. Like veggie juice, or better yet fat of animal origin.
It takes two whips ( according to Aajonus) to lose about 30% of the nutrients. If you blend it solo you might lose even more.

The oxygen is not your friend in this case you need to coat it to prevent oxidization
