If they are frozen and then melt, it will cause oxidization. And make sure those fats are not old.

The bad fat tastes more bland and is sometimes even tasteless. The yellow fat is richer in taste.

You have the grassfed animals with the yellow fat, thats what healthy fat is supposed to look like. With very white beef fat, you have the toxins stored in them.
