<![CDATA[Raw cheese]]>how like idk how to explain it but how can i make my cheese taste more like cheese its going to taste really sour but i dont want that it’s fermenting i think its been 2-3 weeks

The only tip I could give you is move it to a cold fridge (below 40°F / 4°C). This significantly slows down the bacteria so it doesn't get any more sour. Though it does lower bacteria levels I personalty don't see it as a huge downside.
